Opened in October 2002, this Scottsdale restaurant is a fusion of 1950's and 1960's and the island style of the traditional Tiki bars of same era. Drift serves tropical drinks in Tiki mugs and has a South Pacific-influenced menu. The owners have been "researching the history of Tiki for several years in order to get it right." Feast on regional American cuisine with a Southwestern influence, served indoors or out among gardens and a lagoon with black swans. It's known for its brunch, which invites guests into the kitchen for a "backstage" view and interaction with executive chef Anton Brunbauer. Creative dishes aren't cheap -- $12.50 for a taco -- but worth it. Not just any taco, this, but a saffron model stuffed with lobster cakes. Other treats include Maine lobster and scallop pasta with a Caviar cream, artichoke heart cheese crisp with brie and green apple, and Colorado lamb chops in jalapeño-honey mustard.

The Valley's premier high-end Mexican restaurant. No tacos, burros or enchiladas here. Instead, feast on glorious appetizers like the ancho chile stuffed with chicken, nuts and dried fruit. The Mexican seafood entrees are outstanding, especially the potato-crusted tuna and huge grilled Gulf shrimp. And if you're feeling adventurous, try the signature dish: cochinillo asado, roast suckling pig, carved at your table.

This funky cowpoke cantina has been slinging steaks since the 1950s, dished up chuck-wagon style with all the fixin's -- tossed salad, baked potato, beans and squishy rolls. Look for honest, mesquite-grilled slabs of juicy, marbled-for-flavor beef, like the 14-ounce New York steak or Reata Pass' signature two-pound T-bone. Originally a stagecoach stop on the way to Fort McDowell and Prescott, it maintains portions of the old 1880s stage road.

Familiar American fare -- steak, pork chops, chicken, salmon, lamb -- touched with Asian artistry. The results are pure dynamite. Try skillet-roasted mussels in a broth scented with lemongrass, mint, ginger and coconut. Beef tenderloin brushed with hot Chinese mustard and caramelized brown sugar is inspired. So are desserts, like cinnamon-chocolate cake with homemade red pear ice cream, and the coconut crème brûlée tart. (Menu changes with season.) One of the Valley's best.

Chef Nobu Fuduka shows us in exquisite style that Japanese cuisine is so much more than simple sushi, teppanyaki, teriyaki and tempura. His “tapas” concept is art, with nouveau combinations like chilled edamame soup with crème fraiche and caviar; shinshu mushi, an intoxicating broth of mushrooms, sea bass and green-tea soba noodles; and tako-tomato salad with wasabi aioli, citrus and vintage olive oil centered by micro arugula and grape tomatoes. Paired with tastings of sake, wine and champagne, it's a feast fit for an emperor.
